250 g dark baking chocolate

200 g soft butter

200 g icing sugar

3 egg yolks

1 pinch of soluble coffee

1 pinch of salt

50 g bitter cocoa powder

Soften the chocolate in a double boiler.
In a large ramekin or saucepan, mix the melted chocolate, softened butter, icing sugar and the 3 egg yolks.
Mix well so that the whole is homogeneous and without lumps, add the pinch of coffee and the pinch of salt.
Leave to rest in the fridge for about 10 hours (so that the mixture hardens).
Form the truffles: using a small spoon, form small balls and roll them in the cocoa.
