3 fragrant apples

50 g soft butter

1 glass of calvados liqueur

20 cl fresh cream

3 eggs

80 g caster sugar

1/2 teaspoon of liquid vanilla

100 g flour

50 g cornstarch

1 baking powder

Cooking time: 30 min
Preheat the oven to 150°C (thermostat 5).
Peel and cut the apples into thin slices, brown them in butter. When they are golden, flambé them with the calva.
Whisk the egg yolks and sugars in a bowl until white. Add the flour and cornflour, the baking powder, then the cream and mix well.
Stir in the apples.
Beat the egg whites until stiff and add them. Pour into a large mould (tart shape with a fairly high rim), buttered and floured.
Bake for 30 minutes.
Turn out warm, sprinkle with icing sugar and enjoy.
