175 g soft butter

175 g pastry chocolate

125 g caster sugar

125 g flour

4 eggs

Mix the sugar and softened butter together vigorously until you obtain a white, foamy paste.
In the meantime, melt the chocolate in a pan with a little water.
Add the chocolate to the butter/sugar mixture. Add the flour little by little while stirring with a hand whisk.
Separate the egg whites from the yolks and add the yolks one by one to the mixture, stirring with a whisk.
Add a large pinch of salt to the egg whites and beat them with an electric whisk until stiff peaks form.
Incorporate the whites into the dough by gently lifting with a wooden spoon and not by stirring.
Pour the mixture into a cake tin and bake in the oven for 30 to 40 minutes, depending on the oven used. At the end of baking, check with the tip of a knife, it should not be dry but very lightly covered with dough.
Tip: to make this cake to perfection, it is imperative to mix with a whisk very vigorously between each step except, of course, for the incorporation of the whites.
It can be served with a homemade custard for those who like it...
