For the dough:

500 g flour

4 teaspoons of baker's yeast

130 g sugar

150 g soft butter

2 eggs

80 ml of water
For the crème de caramel:

150 g brown sugar

150 g maple syrup

130 g soft butter

1 vanilla bean

In a large bowl, start by mixing flour, baking powder and sugar.
Soften the butter for a few seconds in the microwave (it must not be melted!).
Add it to the mixture. Mix by hand or with a wooden spoon.
Dilute with a little water (very gently) and mix well.
Add the eggs.
As in a kneading machine, continue to mix the dough until it is well blended.
Let rest for 45 minutes to 1 hour.
Prepare the caramel cream.
In a saucepan over low heat, melt the sugar and butter, stirring constantly.
Add the maple syrup and continue to stir until the caramel forms.
Watch the cooking and wait for all the sugar to dissolve.
Extract the vanilla from the bean and add it to the preparation. Stir to combine.
Set aside, off the heat.
Cook the wafers.
Collect the waffle dough and make small balls.
Use a special waffle iron for wafers.
Preheat it according to the instructions.
Place a ball of dough well in the centre and leave to cook for the time indicated (this should be fairly quick, usually barely 1 minute).
Without waiting (the waffle must be very hot), cut it in half with a knife.
Put a large spoonful of caramel cream inside. Apply pressure so that the cream spreads a little bit everywhere.
Leave to cool for at least 2 hours.
It's ready!
