Easy brioche with Thermomix

500 g flour (type 65)

125 g soft butter

15 cl whole milk

20 g fresh baker's yeast or 1 sachet of baker's yeast

3 eggs

80 g sugar

1 tablespoon orange blossom water

1 teaspoon of salt

Cooking time: 30 min
Place the milk and the yeast (crumbled if it is a fresh yeast cube) in the bowl of the Thermomix, then start at 40°C for 3 min on speed 1.
Add half of the flour and blend for 20 seconds on speed 3.
Add the rest of the flour, salt, sugar, eggs and orange blossom water, then set to kneading mode (ear) for 5 minutes.
Add the butter cut into small pieces and continue kneading for 5 minutes on kneading mode (ear).
Leave the dough to rest in the Thermomix bowl for 1 to 2 hours.
Take the dough out of the bowl and mix it a little with your hands (and a little flour), before placing it in a buttered mould (cake mould, crown mould, springform mould...) and leave it to rest for 1 hour.
You can brown the top with a mixture of egg yolk + water + sugar before baking...
Place in a preheated oven at 180°C (thermostat 6) for 30 to 35 min.
