Ingredients fudge brownies

8 tablespoons soft butter at room temperature

250 g chocolate 1/2 sweet in pieces

60 g unsweetened chocolate in pieces

2 eggs at room temperature

1 egg yolk

230 g caster sugar

2 tablespoons vanilla extract

150 g flour

1/2 teaspoon salt

Cooking time: 30 min
Place the oven rack on the 3rd notch and preheat to 200°C.
Butter and flour a 20 cm square baking dish.
Place the butter and the 2 kinds of chocolate in a bowl and melt in a bain-marie, stirring continuously.
When the mixture is half melted, remove it from the heat and continue stirring until it is completely melted.
Leave to cool for 10 minutes.
In a large bowl, beat the eggs, yolk and sugar with a mixer at medium speed, about 4 minutes, until the mixture is thick and pale yellow in colour.
Stir into the chocolate, adding the vanilla until smooth and even.
With a spatula, stir in the flour and salt until incorporated. (Do not beat).
Pour the mixture into the baking dish, being careful to fill the corners.
Bake 30 minutes. The middle of the cake will be soft, the brownie finishes setting as it cools. Let cool 2 hours.
Cut the brownies into 16 squares in the baking dish, then carefully remove the 16 pieces.
Serve immediately or cover with plastic wrap to keep at room temperature.
It will stay fresh for 5 days.
