Ingredients Improved parent eggs

8 potatoes

30 cl thick crème fraîche

5 cl milk

25 g softened sweet butter

200 g grated Gruyere cheese

1 clove of garlic

4 eggs

1 pinch of salt

1 pinch of pepper

1 pinch of nutmeg (or any other spice you like, but it wasn't bad)

Cooking time: 15 min
Cook the potatoes in the water, covered, for 30 min from the boil, maintaining a small boil.
Finely chop the garlic.
Peel the potatoes and cut them coarsely. Put half of them in a salad bowl.
Moisten with the milk and add 20 cl of fresh cream and butter.
Mash with a fork and gradually stir in the rest of the potatoes until the desired purée consistency is reached. Add milk if necessary, but the mashed potatoes must "stick" together.
Then mix with the Gruyère cheese (reserve a good handful for the gratin), garlic, a pinch of salt and nutmeg according to taste.
Arrange the purée in a wide dish not too high. Dig 4 holes in it.
Break and put a whole egg in each hole.
Cover with the rest of the crème fraîche around the eggs. Put the Gruyère cheese on top and add pepper.
Put in a hot oven for 15 to 20 minutes.
Serve with a green salad.
