Ingredients lemon delight

70 g soft butter at room temperature

185 g sugar

2 teaspoons finely grated lemon

3 separate white and yolk eggs

30 g baking powder

18 cl milk

8 cl lemon juice

20 g icing sugar

20 cl of fresh cream.

Cooking time: 55 min
Preheat the oven to 180°C (thermostat 6). Melt 10 g of butter and lightly brush a baking dish with it.
In a bowl, work the remaining butter, sugar and zest with an electric mixer until lightly blended.
Add the egg yolks one by one, beating well between each addition.
Add the flour and milk in several times, alternating to obtain a smooth but not liquid dough (adjust the quantity of milk accordingly).
Finally, mix the lemon juice into the dough.
Whisk the egg whites until stiff, then gently fold them into the dough with a metal spoon twice, taking care not to break them.
Pour the dough into the dish and bake for 55 minutes in a bain-marie until the dessert has taken on a nice golden colour and is firm to the touch.
Leave to rest for 5 min, sprinkle with icing sugar and serve with the crème fraîche.
