450 g butter

3 lemons (or 3 oranges)

90 g soft butter

3 eggs

100 g sugar

Make some zest. Squeeze the lemons and filter the juice.
Melt the butter in a bain-marie. Beat the whole eggs with the sugar, add the melted butter, lemon juice and zest, mix well.
Heat over low heat until the mixture thickens to a creamy consistency. Remove from heat and let cool while continuing to whisk the mixture.
