Mocha buttercream

6 egg yolks

250 g sugar

300 g soft butter

5 drops of coffee extract

7 cl of water

Put the sugar with the water in a saucepan and heat over moderate heat until 121°C (measure with a sugar thermometer).
Meanwhile, put the egg yolks in a bowl and beat at maximum speed for at least 10 minutes.
Once the sugar has become syrupy, pour it in a small stream into the yolks without stopping the food processor. Continue beating until the bowl is cold (you can put your hands on the dish).
Once the container is cold, add the 5 drops of coffee extract while continuing to beat and gradually add the soft butter cut into small pieces.
The mocha cream is ready. Wait until it is cold to apply it to your cake.
