2 puff pastes

1 lemon

4 medium pears

1 egg yolk for colouring

1 bean

125 g almond powder

125 g soft butter at room temperature

100 g caster sugar

1 egg

1 egg yolk

1 tablespoon kirsch

2 tablespoons of flour

Cooking time: 30 min
Prepare the almond cream:
Using an electric mixer, work the butter. Add the sugar, and beat for a few more minutes until the mixture is homogeneous. Add to the preparation first the whole egg, beat, then the yolk, beat. Stir in the kirsch, then the almonds and flour.
Cut the pears into thin slices, sprinkle with lemon, to prevent them from blackening.
Spread the first puff pastry, then spread the almond cream, slide in the bean, then cover with pear slices.
Wet the edges of the dough, then cover with the second puff pastry. Seal the edges.
Mix the remaining egg yolk with a little water. Brush the top of the cake with it.
Place in the oven at 200°C for 12 to 15 minutes, the dough starts to brown. Lower the temperature to 180°C and continue baking for 25 to 30 minutes.
