For the custard:

3 egg yolks

90 g sugar

60 g wheat flour

37.5 ml of milk
For the almond cream:

60 g melted sweet butter

4 eggs

130 g almond powder

100 g sugar

2 puff pastes

1 egg yolk

180 g Nutella®

To make the custard, bring the milk to the boil.
Blanch the egg yolks with the sugar, then add the flour and boiling milk.
Put everything back in the pan and make the pastry cream.
cook for 3 minutes as soon as it starts boiling again.
Then pour the cream into a bowl and cover with cling film.
Leave to cool for 1 hour.
To prepare the almond cream, blanch the egg yolks with the sugar.
Add the almond powder and melted butter and mix.
Whisk the cold custard cream until it is very cold.
Add the almond cream and mix.
Fill a piping bag with the mixture.
Preheat your oven to 180°C (gas mark 6).
To assemble the cake, fill the first 1 cm thick puff pastry with cream (don't forget the bean if you wish!).
Pass a little beaten egg around the edge, then place the second puff pastry on top.
Press the edges together well.
Using a pastry brush, brush the whole cake with the beaten egg.
Mark the edges by squaring them with the blade of a knife, one way and then the other.
Leave to rest in a cool place for 30 minutes.
Brown again and decorate with a knife blade.
Bake at 180°C (gas mark 6) for 40 minutes.
Leave the cake to cool.
Using a knife, cut the cake in half.
Add Nutella® using a piping bag.
Replace the top of the cake.
The cake is ready to eat!
