100 g egg white (about 3 egg whites)

110 g icing sugar

15 nuts

Grind your nuts into powder.
Make a hazelnut butter: melt your butter in a saucepan over medium heat. At first, it makes big bubbles and "sings". As soon as it no longer sings and starts to turn golden and foam, stop the heat and immediately transfer the butter to a bowl so that it stops cooking, passing it through a sieve to separate the impurities. Let cool.
In the meantime, mix all your other ingredients in a bowl with a maryse to avoid incorporating air: icing sugar, flour, walnut powder, egg whites.
Add the hazelnut butter to the preparation and mix.
Leave the dough to rest under film in the fridge for 24 hours to release the aromas and have a nice consistency of financiers.
Pour the dough into small money moulds, about 1 cm thick.
Bake for 15 to 20 minutes at 180°C (gas mark 6).
