1 kg of raw shrimp
1 pineapple
20 cl coconut milk
1 lime
20 cl of liquid crème fraîche
1 shallot
2 tablespoons chopped coriander
20 g soft butter
Sweet paprika, salt, pepper

The day before, peel the shrimp, leaving the tip of the tail and soak them in coconut milk with a tablespoon of paprika and a pinch of salt.
The next day, sear the prawns over medium heat in a frying pan with the butter, shallot and chopped pineapple for about 5 minutes.
Then put the lime juice, liquid cream, coriander and pepper in the pan. Reduce. Serve with basmati rice.
