2 vanilla beans
2 eggs
140 g soft butter + 15 g for the moulds (except if made of silicone)
100 g flour
1 pinch of salt

Cooking time: 10 min
Preheat the oven to 200°C (thermostat 6-7=).
Using a knife, cut the vanilla beans in half lengthwise.
Scratch the inside to remove all the seeds.
Separate the egg whites from the yolks and beat the whites until stiff.
Whisk the butter to obtain a homogeneous mixture. Add the flour, egg yolks, salt and vanilla seeds and mix gently with the egg whites.
Lightly grease the moulds and pour the dough halfway up into the moulds. Don't put too much dough, as the madeleines will swell when baked.
Bake for 10 minutes. The madeleines should be golden and swollen. Let them cool before unmoulding.
