For the base:

3 eggs

3 tablespoons of flour

50 cl milk

60 g soft butter

3 tablespoons of sugar

Vanilla (or other perfume such as orange blossom...)
For the sugar syrup :

150 g of sugar

2 teaspoons of vinegar

3/4 glass of water

Put the flour in a saucepan with the three spoonfuls of sugar and the three egg yolks. Set the egg whites aside. Mix well with the milk. Add the perfume and thicken the cream on the heat. Once the cream has thickened, remove from the heat and add the butter in small quantities, stirring constantly.
Prepare the sugar syrup by mixing 150 g of sugar, 3/4 of a glass of water and 2 teaspoons of vinegar in a saucepan over the heat. Allow the syrup to cool.
Beat the egg whites until stiff peaks form, then pour the syrup in a thin stream while continuing to beat the egg whites. The texture should be light and creamy.
Mix the egg whites with the cream and chill for several hours before serving. The result is a pastry cream with a unique texture!
