4 ripe mangoes

40 g soft butter

2 vanilla beans

250 g caster sugar + 100 g for the dough

10 cl of water

5 cl old rum

1 puff pastry

1 egg yolk

Peel and cut the mangoes in half. In a saucepan, boil the sugar and water.
Cut the vanilla beans lengthwise, scrape the center and mix the seeds with the old rum. In a frying pan, melt the butter, sear the mango halves in the foamy butter and brown them on both sides. Lower the heat, add the rum and vanilla and flambé.
Pour the sugar syrup and the vanilla beans scraped. Boil for 2 minutes and then sprinkle the mangoes gently and continuously with the cooking juices to preserve them.
Spread the puff pastry on a baking sheet without pricking it, brush it with egg yolk, and sprinkle it with sugar. Bake the plate 20 minutes at 280 ° C watching very carefully. When the puff pastry is well swollen and golden, let it cool and cut it into small diamonds.
Serve the roasted mangoes, topped with syrup still warm and accompanied by a sugar puff pastry. You can also add a scoop of vanilla ice cream.
