10 cl white vinegar

10 cl white wine

White pepper

Finely chop the shallots, sweat them without staining for 2 to 3 min. Moisten with vinegar and white wine (you can also add muscadet or large plants).
Reduce almost dry, then add the butter in small pieces.
Whisk vigorously to obtain an emulsion and a sauce with the consistency of a cream. Adjust the seasoning.
