1 kg of flour
75 yeasts
25 cl of lukewarm milk
25 cl of lukewarm water
50 g caster sugar
2 eggs
500 g butter
50 g of honey
10 g of salt
2 sachets of vanilla sugar
3 g of baking soda
600 g pearl sugar (coarse)
1 teaspoon ground cinnamon (optional)

Make a dough with 800 g of flour, the yeast dissolved in the milk and water mixed, the sugar and the beaten eggs.
Let swell for 10 minutes.
Then mix everything again and let it rise for 15 minutes.
Then add the butter, honey, the remaining 200 g of flour, salt and vanilla sugar, as well as baking soda.
Knead everything to obtain a homogeneous dough by adding more flour in rain if the dough is too sticky.
Leave to rise for 10 minutes in a warm place, covered with a cloth.
Then add the pearl sugar and divide into 90 to 140 g dough pieces, depending on the iron you have.
Let it grow a little by sprinkling flour on the dough pieces covered with a clean sheet or cloth (while your iron is hot).
Cook over low heat for large waffles and over high heat for shallow mesh irons.
Enjoy them hot or cold waffles, depending on your preference.
You can add 1 teaspoon of cinnamon in the dough to find a little more the taste of fairground waffles.
