150 g of brown sugar
4 tablespoons of maple syrup
50 g of soft butter
4 tablespoons of whole almond puree
1 teaspoon of liquid vanilla extract
1 egg
200 g dark chocolate good quality coarsely cut with a knife
1 handful of date (optional)
150 g flour, sifted
1 teaspoon of baking soda
1 teaspoon of yeast

Preheat the oven to 200 ° C (thermostat 6-7).
Beat all the wet ingredients with a whisk until a frothy consistency.
Add the chocolate and the pieces of dates.
Mix the flour, baking soda and baking powder then add to the previous mixture.
Use an ice cream scoop to form cookies of equal size and place them on the baking sheet covered with parchment paper, making sure to separate them by about 6cm from each other. Lightly flatten the dough domes with the back of a spoon before baking them for 15 to 18 minutes, until lightly golden.
If your oven, like mine, is not fan-assisted, turn your plate after 10 minutes so that the cooking is even. Take the baking sheet out of the oven and let the cookies cool on it for 10 minutes. Once completely cool, store in an airtight container.
