2 mackerel = 450 gr of rillettes

Cooking: 10 min

COOKING IN COURT-BOUILLON

Brown 1 onion (or shallot), 1/2 carrot and 1 stalk of laminated celery;

Add ½ to 1 liter of dry white wine (be careful the more wine you add, the more acidic there is)

Complete with short fish bouillon to cover the mackerel.

Add a few green peppercorns.

Simmer, then cook over low heat for 10 minutes.

Let cool in the cooking water; keep it.

DEPIAUTER

To reduce the strong taste of the maq. remove the fillets of fat and keep only the beautiful white flesh.

You can optionally add ½ smoked mackerel fillet.

MAKE ASSIMENTAGE (seasoning)

2 tablespoons of crème fraîche,

juice of 1/4 lemon and 1/4 orange (or lime juice),

2 caps of whiskey (we must be able to try something else: vodka or cognac or other?)

salt, pepper, ginger, pili pili, four spices, fort ... ..,

some green peppercorns from cooking.

MIX

Gradually incorporate the maq crumbs. while kneading with a fork. Add cooking juice and possibly cream to arrive at the magical moment of consistency.

Finish seasoning.

COOL at least 24 hours before consuming.
