400 g fresh salmon


200 g smoked salmon


80 g of fresh cream


1 creamy yogurt


1 lemon


1 tablespoon finely chopped dill


Pepper


Salt


Broth (1 onion, white wine, chervil, bay leaf ...)

Cooking: 10 min
cook the fresh salmon in court bouillon for 10 minutes.
meanwhile finely chop the smoked salmon.
In a bowl, mix well the crumbled salmon, the smoked salmon, the crème fraîche, 2/3 of the fjord, the juice of 1/2 lemon, dill and pepper.
Taste and rectify in pepper, lemon.
Add the rest of the fjord if the rillettes are not flexible enough.
Put 4 hours in the refrigerator, we can prepare these rillettes the day before.
