5 red peppers

1 handful of pitted green olives

Cooking: 1 hour

Grill the peppers on the barbecue (I use an electric barbecue) or in the oven. Put them directly on the grill and blacken all the skin of the peppers.

Once darkened, put them one by one in newspaper or in an airtight plastic bag until they cool.

Once the peppers are warm, remove the skin (which should come off easily), the seeds, then cut them into strips about 1cm wide. Dice the tomatoes.

In a non-stick Dutch oven, put a little oil, the peppers and tomatoes, as well as the chopped garlic, the piece of sugar and the green olives (well drained and cut in half).

Cook over high heat for about twenty minutes then over low or medium heat until the preparation begins to stick. There should be no more water.
