Scallops on a bed of leeks

Start the recipe Scallops on a bed of leeks
STEP 1
Keep only the whites of the leeks. Slice them into the thinnest possible rounds (1mm).
2ND STEP
Cook them over low heat in a pan with 1/2 glass of water until the leeks are perfectly melted and no water remains. If necessary, drain after cooking to remove excess water.
STEP 3
Add the crème fraîche, salt and pepper to the pan, as well as a good pinch of nutmeg. Keep warm.
STEP 4
While the leeks are cooking, clean the scallops. Pat them dry on absorbent paper. Pepper them lightly on both sides and pass them in flour.
STEP 5
Heat the oil in a pan and quickly brown the shells on each side.
STEP 6
Spread the hot leek fondue on 4 plates and place the scallops on top. Serve immediately.
