Medium-sized eggplants

Parsley

STEP 1

Remove the skin from the eggplants, leaving just a little. Cook for 20 minutes in a pot full of water.


2ND STEP

Prepare the sauce by mixing garlic, cumin, salt, olive oil, vinegar, chopped parsley, red pepper.


STEP 3

Once the eggplants are well cooked, mix them with the prepared sauce and leave on low heat while stirring.


STEP 4

Check the taste, if you prefer more spicy, add hot pepper.


STEP 5

You have to dry the sauce from the water and just leave the oil to taste.


STEP 6

You can also add a crushed tomato on the contents. To serve.
