Ingredients Chocolate mousse verrine on orange bed :

Number of persons


For orange jelly: 



40 cl of orange juice 



10 cl of water 



4 agar-agar 



40 g sugar 



Orange zest 
For the chocolate mousse: 



100 g of pastry chocolate 



3 egg 



20 g sugar 



1 teaspoon of cinnamon 





Step 1 For orange jelly: mix the orange juice (at room temperature otherwise the jelly takes too fast) and the sugar in a container. 

2nd step In a saucepan, put the water, orange zest and agar agar . 

Step 3 Bring to a boil and extinguish. 

Step 4 Put the boiling water in the fruit juice and stir. 

Step 5 Spread the mixture immediately in the verrines . 

Step 6 For chocolate mousse : melt the chocolate in a bain-marie. 

Step 7 Meanwhile, mix egg yolks with sugar and cinnamon . 

Step 8 Add the melted chocolate to this mixture. 

Step 9 Beat the egg whites until smooth and incorporate them gently. 

Step 10 Pour the chocolate mousse over the orange jelly (which must be firm). 

Step 11 Decorate with candied orange peel. 

Step 12 Enjoy your meal.

I serve this dessert with crispy cookies and more. Orange can be replaced by other fruit juices: raspberry, banana, strawberry ...
