Sweet and sour summer salad

Number of people

250 g cherry tomato

2 apples (fuji or granny smith)

500 g arugula and lamb's lettuce

150 g feta cheese

1 bunch of basil

3 tablespoons of olive oil

2 tablespoons grated parmesan cheese

150 g pine nuts

Preparation: 15 min
Step 1
Peel the apples and cut them into very thin slices. Wash the cherry tomatoes and cut them in half. Wash the salad.
Step 2
Mix everything in a large bowl, and add the crumbled feta cheese.
Step 3
Make a sauce with the finely chopped basil mixed with olive oil and mix it with the parmesan and a handful of pine nuts to make a thick pesto sauce.
Step 4
Grill the remaining pine nuts and add them to the salad.
Step 5
Serve, it's ready!
Author's note
Feta cheese can also be replaced by the same amount of goat cheese or parmesan shavings. Some olives can also be added. The quantities put in are to be adapted according to your tastes!
