Preparation time Pear log : 30 minutes
Cooking time: 5 minutes


Ingredients (for 6 people): - 10 spoon biscuits

- 1/4 liter of custard

- 400 g of pears

- 3 sheets of gelatin

- 10 cl of cream

- pear alcohol (optional)




For chocolate cream :

- 100 g chocolate

- 20 g of sugar

- 20 g butter

- 10 cl of cream

Preparation of the recipe Pear log :




Stir in the crème anglaise gelatine previously softened in cold and drained water, half of the pureed pears, the whipped cream and the remaining pears diced.

Line a cake pan with butter cookies soaked in alcohol (cut with water if necessary, or slightly soaked with water or syrup if not alcohol).

Pour in the cream.

Finish with a layer of biscuits.

Leave in the refrigerator overnight.

The next day, make the chocolate topping cream as follows:

Melt the chocolate in a bain-marie with butter and sugar.

Incorporate the cream out of the fire.

Coat the log with this cream and refrigerate (3-4 hours, minimum 2 hours)
