Ingredients
  

  • 2 large ripe bananas mashed
  • 2 large eggs
  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp fine sea salt
  • 1 ¼ cups buttermilk
  • 3 tbsp unsalted butter melted
  • 1 tbsp vanilla extract
  • 2 tbsp light brown sugar optional

Optional Add-Ins:

  • ¼ cup mini chocolate chips
  • ¼ cup chopped pecans or walnuts
  • 3 tbsp rolled oats
  • 1 tbsp creamy peanut butter

Instructions
 

  • Preheat waffle iron to medium-high heat.
  • In a large bowl, mash the bananas, then whisk in eggs, buttermilk, melted butter, vanilla, and brown sugar.
  • Add flour, baking powder, baking soda, and salt. Fold gently until just combined.
  • Stir in optional mix-ins if desired.
  • Lightly grease waffle iron. Scoop batter into the center and close the lid.
  • Cook for 3–4 minutes, or until golden brown and crisp.
  • Keep finished waffles warm on a wire rack in a 200°F oven until ready to serve.
  • Repeat until all batter is used. Serve warm with your favorite toppings.

Use fully ripe bananas for the best flavor and texture. Optional mix-ins like chocolate chips, chopped nuts, or oats let you personalize each batch.
