- 1 lb beef smoked sausage sliced into ½-inch rounds
- 1 red bell pepper diced
- 1 medium yellow onion sliced
- 1 lb baby potatoes quartered
- 1 cup cherry tomatoes halved
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley chopped (optional garnish)
Optional Add-Ins:
- 1 cup frozen corn
- Pinch of red pepper flakes
- ½ lb ground beef and Italian sausage blend pre-browned
Heat oil in a skillet over medium-high heat. Brown sliced sausage for 3–4 minutes. Remove and set aside.
In the same skillet, sauté onion and red bell pepper for about 5 minutes until softened.
Add potatoes, garlic powder, paprika, salt, and pepper. Stir to coat evenly.
Pour in ¼ cup water, cover, and steam on medium heat for 10–12 minutes until potatoes are fork-tender.
Stir in cherry tomatoes and return sausage to the pan. Cook for 2–3 more minutes.
Sprinkle parsley on top and serve hot.
Make sure to slice the sausage evenly for consistent browning, and give the potatoes space in the pan so they steam, not stew.
