Ingredients
  

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 garlic cloves minced
  • 2 cups chicken broth
  • 1 cup whole milk
  • 8 oz penne or rotini pasta
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Optional Add-Ins:

  • Pinch of crushed red pepper flakes
  • 1 cup sliced mushrooms sautéed
  • 1 cup baby spinach stirred in at the end

Instructions
 

  • Season chicken with salt and pepper. Sear in hot oil until golden and mostly cooked through. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic for 30 seconds.
  • Pour in broth and milk. Bring to a gentle simmer, scraping up any browned bits.
  • Stir in dry pasta, cover, and cook 10–12 minutes, stirring occasionally.
  • Return chicken to the skillet. Add Parmesan in handfuls, stirring until smooth and creamy.
  • Stir in parsley and any optional add-ins. Adjust seasoning and serve warm.

Notes
