Ingredients
  

  • 2 lbs ground beef 85% lean
  • 1 large yellow onion diced
  • 3 garlic cloves minced
  • 1 cup diced bell pepper any color
  • Two 28-oz cans crushed tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • teaspoons kosher salt or to taste
  • ½ teaspoon black pepper

Optional Add-Ins:

  • 1 cup frozen corn
  • 1 15-oz can red kidney beans, drained and rinsed
  • ½ jalapeño finely diced

Instructions
 

  • Brown the ground beef in a skillet until fully cooked. Drain excess fat.
  • Add diced onion, garlic, and bell pepper to the skillet; sauté for 2–3 minutes.
  • Transfer the mixture to a slow cooker.
  • Stir in crushed tomatoes, broth, tomato paste, Worcestershire, oregano, paprika, salt, and pepper.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Stir in any optional ingredients during the last 30 minutes.
  • Taste and adjust seasoning before serving.

Notes

Brown the beef first for deeper flavor and better texture in the final dish. Optional add-ins like corn or beans can stretch it even further for busy weeknights.
