Ingredients
  

  • 2 lb boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional

Optional Add-Ins:

  • ¼ cup maple syrup for glazing in final minutes
  • ½ teaspoon chipotle powder swap for cayenne for smoky heat

Instructions
 

  • Preheat smoker to 225°F with your preferred wood chips.
  • Pat chicken dry with paper towels for better seasoning adhesion.
  • Coat chicken with olive oil in a mixing bowl.
  • Combine spices in a separate bowl and mix well.
  • Rub seasoning onto chicken thoroughly on all sides.
  • Arrange on smoker grates smooth-side up with space between pieces.
  • Smoke for 60–75 minutes until internal temp reaches 160°F.
  • (Optional) Sear briefly on grill or skillet for added char.
  • Rest for 5 minutes under foil before serving—aim for 165°F final temp.

Notes

Be sure to rest the chicken after smoking to lock in all those flavorful juices. For extra depth, try a quick sear at the end or finish with a maple glaze during the final few minutes.
