Ingredients
  

Main Ingredients:

  • 1 ½ lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 3 jalapeños finely diced (seeds removed for less heat)
  • 3 garlic cloves minced
  • ½ cup low-sodium chicken broth
  • ½ cup plain Greek yogurt
  • ½ cup shredded Monterey Jack cheese

Optional:

  • ¼ cup chopped cilantro
  • 1 tbsp fresh lime juice

Instructions
 

  • Season chicken with salt, pepper, and smoked paprika.
  • Sear in hot olive oil until golden brown on both sides (about 4–5 mins per side). Remove and set aside.
  • Sauté jalapeños and garlic in the same skillet over medium heat for 2 mins.
  • Deglaze with broth, then return chicken. Cover and simmer 8–10 mins until fully cooked.
  • Turn off heat, then stir in yogurt and cheese until smooth and melted.
  • Add cilantro and lime juice if using, let rest 2–3 mins, and serve.

Notes

For a mild version, remove all seeds and membranes from the jalapeños. To keep the sauce smooth, stir in the yogurt off the heat.
