- 1 ½ lbs boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium yellow onion diced
- 2 medium carrots diced
- 2 celery ribs diced
- 3 cloves garlic minced
- ⅓ cup sun-dried tomatoes chopped
- 6 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon fresh thyme or ½ tsp dried
- 1 teaspoon kosher salt plus more to taste
- ½ teaspoon black pepper
- 1 cup heavy cream
- ½ cup freshly grated Parmesan
Optional Add-Ins:
- 1 cup potato gnocchi
- 1 ½ cups cooked egg noodles
- 1 cup chopped baby spinach
Sear chicken in olive oil until lightly browned; set aside.
Sauté onion, carrot, and celery until soft; stir in garlic and sun-dried tomatoes.
Add broth, herbs, salt, and pepper. Return chicken, bring to a boil, then simmer for 20 minutes.
Shred chicken, return it to the pot, and stir in heavy cream.
Add Parmesan and stir until melted and creamy.
Stir in gnocchi (cook 8–10 mins) or add noodles/spinach just before serving.
Taste and adjust seasoning as needed. Serve warm.
