Ingredients
  

  • 24 –30 ladyfingers
  • 1 to 1½ cups cooled brewed coffee strong or decaf
  • 16 ounces mascarpone cheese
  • 1 cup heavy cream
  • ½ cup granulated sugar adjust to taste
  • ¾ cup ground pistachios or pistachio paste, plus extra for garnish
  • 1 teaspoon vanilla extract

Optional: chocolate shavings, berries, or caramel drizzle

Instructions
 

  • Whip heavy cream with half the sugar until soft peaks form.
  • In another bowl, blend mascarpone, remaining sugar, ground pistachios, and vanilla.
  • Gently fold the whipped cream into the mascarpone mixture.
  • Dip ladyfingers briefly in the cooled coffee and arrange a layer in your dish.
  • Spread half the pistachio-mascarpone cream on top.
  • Repeat with a second layer of dipped ladyfingers and finish with the remaining cream.
  • Chill for at least 4 hours. Garnish with extra pistachios before serving.

Notes

For best results, use fresh pistachios or high-quality pistachio paste. Keep the coffee strong but not scalding hot to avoid soggy ladyfingers.
