- 1½ cups graham cracker crumbs
- 5 tablespoons unsalted butter melted
- 24 ounces cream cheese softened
- 1 cup granulated sugar
- 2 tablespoons high-quality matcha powder sifted
- 3 large eggs room temperature
- ½ cup heavy cream
- 1 teaspoon pure vanilla extract
- ¼ teaspoon fine sea salt

Wrap springform pan with foil; lightly grease inside.
Mix graham cracker crumbs and butter; press into pan. Bake crust at 350°F (175°C) for 10 minutes.
Lower oven to 325°F (163°C).
