Ingredients
  

  • All-Purpose Flour: 1 cup
  • Unsalted Butter melted: ½ cup
  • Granulated Sugar: 1 cup
  • Cocoa Powder: ⅓ cup
  • Eggs: 2 large room temperature
  • Salt: ¼ teaspoon
  • Mascarpone Cheese softened: 8 ounces
  • Powdered Sugar: ⅓ cup
  • Espresso Powder: 1 teaspoon or 2 tablespoons strong brewed coffee

(Optional) Vanilla extract, chocolate chips, or extra espresso granules for added flavor.

Instructions
 

  • Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment.
  • Mix Brownie Batter: Whisk melted butter and sugar until smooth. Beat in eggs one by one. Fold in flour, cocoa powder, and salt just until combined.
  • Prepare Topping: In a separate bowl, beat mascarpone, powdered sugar, and espresso powder until silky.
  • Layer: Pour brownie batter into the pan. Spoon the mascarpone mixture on top and swirl with a knife or skewer.
  • Bake for 22–28 minutes or until a toothpick comes out with a few moist crumbs.
  • Cool & Slice: Let them rest for 15 minutes before lifting out with parchment and cutting into squares.
